Today is my last day of my fall break and I am back to the grind tomorrow but at least I only have to go tomorrow and I have Friday off. Tomorrow should actually be interesting because I am meeting with an RN who does home health and I get to shadow her for the day.
I finished my nursing home clinical rotation last week so now I am out in the community doing different things until the semester ends…which is in December WOOHOO 🙂
Today I have just been studying for my care of adults lecture class exam that I have on Monday. I am studying about shock, chest tubes, vents, diabetes, and thyroid problems fun fun?!?! Chest tubes are interesting and so are vents but diabetes, thyroid problem and shock are totally boring.
The chapters go way to much into the patho of it and I just want to know the nursing interventions. However, if you are a college student you know that while studying for tests you have to take snack breaks..right? I love to eat during my study breaks….it seems to help with my brain fixing to explode from studying.
So today during one of my famous snack breaks I made some tasty brownies. However, these are not your normal everyday brownies….they are gluten & dairy free brownies. Yes, just to let you guys know Ben and I are still on that gluten & dairy free diet and it is going good (even though we have had some slight set backs).
Recipe for Gluten and Dairy-Free Brownies
These brownies are super tasty and they are even sort of healthy for you considering they are brownies. Here is a picture of my lovely creation (they taste better than they look lol):
Here is the recipe on how to make chocolate brownies gluten & dairy free…. if you want to make them. It is super easy and rather inexpensive.
- 1 2/3 cup Granulated sugar
- 3/4 cup Olive Oil
- 2 Tbsp water
- 2 large eggs
- 1 1/3 cup Bob’s Red Mill Brown Rice Flour (totally gluten & dairy free)
- 3/4 cup Baking Cocoa Nestle (totally gluten & dairy free)
- 1/4 tsp. salt
- 3/4 cup of your favorite chopped nuts
- Powdered Sugar
Preheat the oven to 350’F. Then grease 13×9 inch baking pan. Combine sugar, olive oil, and water in a large bowl. Stir in eggs and combine brown rice flour, cocoa, and salt in a medium bowl. Then stir in sugar mixture. Stir in nuts. Then spread into the prepared baking pan. Bake for 18 to 25 minutes or until wooden pick inserted into center comes out slightly sticky. Cool completely in pan and then sprinkle with desired amount of powered sugar and then cut into bars. Then recipe makes about 24 brownies.
There you have it! So if you are studying and need a tasty snack there you go and you don’t have to feel guilty about eating them because they are sort of healthy for you. Well I am back to studying! Wish me luck on my test Monday and my home health day tomorrow. I will let you know how it goes!
