Ingredients for Potato Salmon Cakes:

1 can of 14 oz Salmon

2 1/2 cups of prepared Mashed Potatoes

2 egg whites

1 Tablespoon of chopped Parsley

1/2 cup of sliced Green Onions

Olive Oil for frying

2 cups dried bread crumbs

Horseradish-Dill Sauce for dipping (optional)
First drain salmon and break into chunks. Then mix the potatoes with the egg whites and parsley until it is smooth and mixed together evenly. Then mix in the salmon chunks and green onions. Heat the olive oil in a skillet. Now take the salmon mixture and form it into individual patties and coat with bread crumbs. Then fry for about 3 minutes on each side or until brown. Then ENJOY!
This is best served with Horseradish-Dill Sauce for dipping.
