Corned Beef Hash Ingredients:
-
4-8 Green Bell Peppers
-
1 can of Corned Beef
-
2 cups of Cooked Rice (Tip-Get Minute Rice)
-
1 16 ounce can of Diced Tomatoes
-
1 Medium Sized Onion or 2 tablespoons of Onion Powder
-
1 teaspoon of Salt & Pepper
-
3 Cooked Potatoes (boil until soft)
First, began by cleaning and removing the inner part of the bell peppers. Tip-Cut the peppers like you would a pumpkin to remove it’s seeds.
Then take the peppers and place them into a medium pot and parboil them. (Parboil-this is where you bring the water barely to a boil but not a rapid boil.). Your Peppers are done when they change from a green color to a bright green but they still are holding their shape.
While you are Parboiling your peppers, start making the contents that will be inside the peppers. To do this combine your cooked rice, 1 can of Corned Beef, can of Diced Tomatoes, Onion, Salt & Pepper, and 3 Cooked Potatoes together in a large cooking pan.
After you do this make sure to stir everything together and mash the potatoes into the rice. Heat this at medium-high and stir occasionally until it comes to a boil.
Once at a boil, preheat your oven at 350’F and start stuffing your peppers.
When you are stuffing you peppers, place them into a baking dish and stuff the contents until they are over flowing. Once you oven has preheated, place the peppers in the oven for 10-15 or until the filling is hot. You will have left over stuffing that can be served on the side of the stuffed peppers. Now you are done and ENJOY!!
