Ingredients to Make Peach Muffins with Pecans:

1/2 Cup of Melted Butter

3/4 Cup of Sugar

1 Egg

1/2 Cup of Sour Cream

1 Teaspoon of Vanilla Extract

1/2 Teaspoon of Cinnamon

1 1/2 Cup of Self-Rising Flour

1 Cup of Peach Slices (cut into finely chopped pieces)

1 cup of Finely chopped Pecans
In a mixing bowl, cream butter and sugar with a mixer. Add egg, sour cream, and vanilla: mix very well. Stir in cinnamon and then flour just until moistened. Put in peaches and pecans. Fill greased or paper-lined standard size muffin cups (cup-cake cups work too) about three-quarters full.
Bake in preheated oven at 400’F for 20 to 25 minutes or until muffins are done (if you stick the middle of the muffin with a toothpick and it comes back clean meaning nothing stuck to the toothpick they are done).
